On selected dates throughout 2022, gourmands can experience the culinary prowess of three Michelin-starred chef, Norbert Niederkofler (pictured above with Chef Dario Ossola, at Aman Venice.

A series of dinner events showcasing fresh produce sourced from the shores of the Floating City will be offered at the hotel. Accompanied by the hotel’s executive chef, Chef Norbert will prepare a six-course Cook the Lagoon-themed tasting menu, and interact with guests during the service, in the atmospheric setting of Aman Venice’s Palazzo.

Paying homage to Venice’s locale, the evenings will bring the chef’s revered Cook the Mountain philosophy to the shores of Venice.

Originating from his St. Hubertus restaurant at Aman Partner Hotel, Rosa Alpina in the Dolomites, the Cook the Mountain concept has received much acclaim, with awards including three Michelin stars and a Michelin green star for sustainability.

The menu uses ingredients sourced within the restaurants’ vicinity in a groundbreaking environmentally conscious practice that supports local farmers in the Dolomite Mountains and serves as a torchbearer for the industry.

Bringing his ingenuity to a new setting, at Aman Venice Chef Norbert’s dishes will showcase ingredients found in the Veneto region.

From seafoods such as scallops and grouper to more unusual dishes such as glasswort – a genus of succulent plant served with yogurt and citrus fruits – guests are invited on a gastronomic journey of discovery through a creative, inventive, and sustainable menu.

The experience can also be accompanied with a wine pairing course by the hotel’s sommelier for a truly exceptional evening.

For those seeking to extend their time at Aman Venice, there is also the option to combine the evening with a two-night stay including daily breakfast, a complimentary minibar and a cocktail and cicchetti in the hotel’s iconic bar – a must for those seeking a full gastronomic experience.
