“After listening to our guests and the local community, we have evolved the restaurant to celebrate a more casual and relaxed style of dining, leading with an à la carte menu, or a feed-me menu for those wanting to take the hassle out of ordering.”

Helming the kitchen of Pier Dining is Chef de Cuisine Dimitri Damman, a rising culinary talent hailing from France. Boasting a wealth of expertise from working in esteemed international restaurants, Damman has honed his skills under the tutelage of Australia’s best chefs at Pier One since 2015, ensuring that the restaurant’s legacy of showcasing emerging culinary stars remains at the forefront.

Situated in the heart of the Walsh Bay creative precinct, Pier Dining offers a captivating connection to the harbour through its prime location right on the water. Diners will be treated to a menu that weaves in the story of an underwater forest that thrives beneath the historic beams stretching 30 metres into the sea, with nods to the seaweed and maritime heritage woven throughout the decor and garnishes.

The seafood-driven menu at Pier Dining features produce from nearby shores, offering refreshing takes on familiar favourites. Standout dishes include the King George Whiting Parmi and the Campanelle Carbonara with Home-Cured Kingfish Collar, showcasing the culinary team’s commitment to showcasing the best of Australia’s bountiful coastal offerings.

The real star of the menu, however, is the Sydney Rock Oyster, available freshly shucked with mignonette or charred with smoked wagyu fat and coconut vinegar – a true celebration of the region’s renowned seafood. And for those seeking a truly immersive dining experience, the signature dish, Queensland Coral Trout with Green Mango, Chilli, Ginger and Coriander, is served up tableside, adding a touch of theatre to the proceedings.
