From the moment you step into the art-filled lobby, the atmosphere envelops you – a symphony of vaulted ceilings, curated interiors, and thought-provoking installations by Surry Hills artist Louise Olsen. Each detail hums with intention, each corner invites discovery.

At the heart of The Eve lies Bar Julius, a European-inspired lobby bar brought to life by Liquid & Larder, the visionaries behind Sydney’s most celebrated venues. From the first sip of a morning espresso to the playful theatrics of a Crystal Mimosa served tableside, Bar Julius delivers more than flavours, it delivers moments.

The menu is a celebration of bold, fresh ingredients, with cocktails like the Bar Julius Negroni, crafted in collaboration with Archie Rose, seamlessly blending local character with global sophistication. Rich burgundy tones, tactile marble finishes, and bespoke leather seating evoke the warmth of a European bistro, while Sydney’s dynamic energy beats at its core.
